Recipes
This recipe is my savior when it comes to no time, and nothing else in the kitchen! All these ingredients are usually in every household, and it is so easy to add or subtract to this list to make it fit for you!
My daughter goes to dance every night after school, and half the time I too am at the studio, so I need to figure out -ALWAYS- things for dinner that
1) travel well
2) easy to put together in a pinch
3) provide substance & protein
4) limited ingredients

Sometimes I can get fancy with my dinners.. steak in the sous vide, a crockpot set up with a beautiful roast, chicken & rice burritos, or even some super easy quesadillas! Sometimes my day before I get the kids allow me to get more creative, and some days I am running out of time once they get on the bus! And we are also investigating the idea with homeschooling.. which would help with the running around in the morning and before the after school activities.. I just need to balance the school work with home economics now and some how my work!

Anyways.. here is the super easy, super manageable recipe! This dinner is suitable for a family of 4, with usually some leftover for the next day!

Ingredients:
1lb ground beef (or turkey!)
1 cup rice
2 cups broth (bone, chicken, or beef!)
1 cup water
1 Sweet or white onion
1 Pepper (any color- also- optional!)
Garlic Powder
Onion Powder
Montreal Steak Seasoning
*Seasonings- measure with your heart!
Thaw out your ground meat
Chop up your onion & pepper
Saute in a deep pan in butter (this is a super old cast iron wok that I refuse to get rid of, but this would be my upgrade when its time!)
Cook your ground meat & add onions/peppers

Next-
Add in your uncooked rice (I prefer basmati white rice), broth, & water
Mix
Add In your seasonings, measure with your heart!
Mix well
Cover & simmer

I usually have it simmer on low for about 20 minutes?
Stir occasionally
You will have a nice & fluffy dinner ready to eat or separate for meal prepping!
